At this point I think I am just addicted to everything cinnamon in general. So today we are using what is clearly my favorite spice and making a Vegan Coffee Cake. It is moist, soft and a cinnamon lovers fix. We are on day 11 of my VegMas2020 recipe series and I am kind of sad that we only have one day left. This has been a challenge and a happy journey and I can’t wait until next years.
A few tips for this loaf: You can scale back on the amount of streusel topping and you can use your preferred sugar instead of my brown sugar & white cane sugar mixture. I hope you enjoys todays recipe.
